My life mirrors the restaurant I built: disciplined, resilient, and quietly romantic with a dash of fun and humour at every turn; always smiling regardless. From a bomb-scarred childhood in 1975 in Monaghan, Ireland to running London’s longest-standing Michelin star kitchen, the story blends Irish instinct, French rigour and hard-won hospitality respect, making Pied à Terre not just a restaurant, but a personal autobiography on a plate.
